Lemon drizzle loaf

250g caster sugar
Method
- Preheat the oven to 180ºC, grease and line a 22 x 12 x 6cm loaf tin.
- Place the sugar and butter in a bowl and whisk until light and fluffy, about 5 min.
- Add the eggs one at a time, whisking well after each addition. Whisk in lemon juice and zest.
- Sift together flour and baking powder. Fold half the flour mixture and yoghurt into batter, then repeat with remaining flour and yoghurt.
- Pour batter into the loaf tin. Bake for 55 min or until cooked through. Remove from oven, allow to cool in tin, then remove cake from tin. Leave to cool completely.
- For the icing, place the sifted icing sugar in a bowl, slowly add the lemon juice and stir to form a paste.
- Drizzle icing over the cake and top with lemon zest.
