Lemon and honey creams

2 cups milk
Method
- Add milk and lemon zest to a medium-size pan over medium heat and bring to a simmer. Meanwhile, in another bowl, whisk together eggs and sugar until pale.
- Gradually whisk hot milk into the egg mixture. Return mixture to saucepan and add vanilla and cornflour.
- Whisk over medium heat for 5–6 minutes until thickened. Remove from heat and pour into 4 ramekins.
- Allow to cool, then place in the fridge to set overnight.
- Pour honey into a pan and boil for 4–5 minutes or until the honey becomes a dark, amber colour.
- Carefully pour a thin layer of the honey over each of the cooked custards and allow to harden.
- Serve immediately, garnished with lemon zest.
