Lemon polenta cake with lemon glaze

100g ground almonds
Method
- Preheat the oven to 160ºC and line a 23cm square baking tin with baking paper.
- Combine the polenta, almonds and coconut, sift over the baking powder and stir in the lemon zest.
- Cream the butter and sugar until pale and fluffy. Add the eggs one at a time, beating well after each addition.
- Fold the lemon juice and dry ingredients into the butter and sugar mixture until just combined.
- Spoon the mixture into the tin and bake for 1 hour or until golden and just coming away from sides of tin. Remove from oven and cool in the tin.
- For the lemon glaze, sift the icing sugar into a bowl and stir in the lemon juice to make a thick glaze.
- Spread the glaze over the top of the cake and sprinkle with the coconut curls.
