Orange Mozzarella and Fennel Bruschettas

3-4 navel oranges
Method
- cut the top and the bottom off each pomelo. Carefully cut the peel off in strips, working from top to bottom.
- Cut the oranges into thin slices and toss in a bowl with remaining salad ingredients. Season well and set aside to marinate.
- Preheat a chargrill.
- Brush bread slices all over with olive oil. Chargrill until well toasted and even a little charred in places.
- Rub each piece of toast lightly with a garlic clove to flavour.
- Place hot toasts on a platter and dot cheese over.
- Pile orange salad on top and serve at once.
Cook’s tip:
- Boost the flavour of dishes using oranges by adding the finely grated zest too.
- Avoid the white pith of the fruit as it may impart a bitter flavour.
