Marsh grapefruit salad with feta, rocket and pistachio dukkah

3 Marsh pomelos
Method
- Cut the top and the bottom off each pomelo. Carefully cut the peel off in strips, working from top to bottom.
- Slice between membranes to remove each segment.
- Toss rocket on a platter and scatter over pomelo, feta and onion.
- Toss dukkah ingredients in a dry pan over medium heat until toasted and fragrant. Cool.
- Whisk dressing ingredients together and dress the salad.
- Scatter salad with dukkah and serve.
Cook’s tip:
- Squeeze the leftover bit from the segmented grapefruit for juice.
- Dukkah is wonderful served as a dip with fresh bread and olive oil too.
