Chocolate and Orange Pavlova

6 large egg whites
Method
- Preheat oven to 110°C.
- Line a large baking tray with baking paper.
- Beat egg whites until stiff. Add sugar, gradually, beating until fluffy and stiff.
- Add lemon juice and fold in cornflour, cocoa and salt.
- Dollop mixture onto tray and form a thick mound. Shape a hollow in middle to hold topping.
- Bake for 1½ – 2 hours until crisp but still squidgy in the middle.
- Cool in oven.
- Toss oranges, ginger and syrup, brandy and orange peel together. Macerate for at least 30 minutes.
- Top pavlova with whipped cream, oranges and chocolate. Serve.
