Preserved lemon and oregano potatoes

750g baby potatoes, parboiled
Method
- Preheat oven to 200ºC. In a bowl, combine garlic, olive oil, oregano, salt and pepper.
- Scrape the flesh from the preserved lemon and add to marinade. Thinly slice lemon skin and add to mixture.
- Drain the potatoes. Cut a shallow cross into the top of each potato and press together to split the skin open.
- Place potatoes split side up in a roasting pan and drizzle with lemon mixture.
- Bake for 30 minutes or until crispy and golden.
